When To Harvest Fuyu Persimmons

Knowing when to harvest Fuyu persimmons is key to enjoying them at their best. The fruit is usually ready in late autumn, once it turns a rich orange colour and the skin becomes glossy. You can pick them while firm — there’s no need to wait for them to soften fully like astringent varieties.

How To Tell When Fuyu Persimmons Are Ripe

Fuyu persimmons are ripe when the fruit has fully coloured and the skin is smooth with a slight give when gently squeezed. The calyx (leafy top) may also start to loosen slightly. If picked too early, the flavour will be underdeveloped, so wait until they reach a deep, consistent orange.

How To Dehydrate Fuyu Persimmons At Home

Fuyu persimmons are excellent for drying thanks to their firm, sweet flesh. Simply slice the fruit into 5–10 mm rounds, remove seeds if present, and place in a dehydrator or oven at low heat (approx. 55–60°C) for 10–14 hours. Once leathery but still pliable, store in an airtight container. Dehydrated persimmons are perfect for snacking, baking, or adding to cereals.
